Arroz con Leche with Glazed Apples

Ingredients

  • 1 Package Bob Evans Tasteful Sides Sliced Glazed Apples
  • 2 Cups water
  • 1 Cup long grain white rice rinsed
  • 1 4-inch cinnamon stick
  • 12 Ounces low fat evaporated milk
  • 14 Ounces low fat sweetened condensed milk
  • 1 1/2 Teaspoons vanilla extract
  • 1/4 Teaspoon salt
  • 2 Large eggs
  • Ground cinnamon for garnish

Instructions

  1. In a medium pot, combine water, rice and cinnamon stick. Bring to a boil over medium heat.
  2. Decrease heat to low, cover and cook for 12 minutes until the rice absorbs the water. Remove from heat.
  3. Remove the cinnamon stick from the rice. Add evaporated milk, condensed milk, vanilla and salt to the rice. Stir to combine.
  4. Scoop out 1 cup of rice mixture and place in a bowl. Add eggs to the rice in the bowl and whisk until mixed thoroughly.
  5. Return the egg and rice mixture to rice pot and stir to combine. Heat for 5 minutes over medium heat, stirring frequently.
  6. Remove from heat and set aside for 5 minutes to cool.
  7. Stir in apples. Let mixture thicken and cool to room temperature.
  8. Serve and garnish with ground cinnamon.
