The perfect taste for the season, this Mashtini perfectly combines cooked vegetables and Bob Evans sausage in an eye-catching way.

Recipe Ingredients

1 cup
Bob Evans Original Roll Sausage
2 cups
cubed butternut or acorn squash
1
zucchini, cut into 1/2" slices
1 tablespoon
olive oil
1/4 cup
sliced Kalamata olives
1 tablespoon
capers, drained
1 tablespoon
minced basil and parsley
2 tablespoons
shredded Parmesan cheese

Instructions

Preheat oven to 425°F. Place squash and zucchini on a rimmed baking sheet and toss with oil. Roast for 15 to 20 minutes or until tender and browned. Remove from oven and stir in olives, capers and herbs.

Prepare Bob Evans Original Mashed Potatoes by following recommended microwave instructions on the package.

Place about ¼ package (6oz.) of mashed potatoes into each martini glass.

Top mashed potatoes with ¼ of cooked vegetables.

Place ¼ cup crumbled sausage over vegetables and sprinkle each with ½ Tbsp. Parmesan cheese.
