Ingredients

  • 2 Cups Bob Evans Original Mashed Potatoes
  • 2 Cups all purpose flour
  • 2/3 Cup salted butter
  • 2 Large eggs
  • 1/2 Cup milk
  • 1 Cup raisins
  • 1 Cup walnuts chopped
  • 1/4 Cup powdered sugar
  • 2 Cups granulated sugar
  • 2 Teaspoons ground nutmeg
  • 1 Teaspoon ground cloves
  • 2 Teaspoons ground cinnamon
  • 1/8 Teaspoon salt
  • 2 Teaspoon baking powder

Instructions

  1. Preheat oven to 325 degrees F. Grease a 10" bundt cake pan with shortening, then dust with flour.
  2. Sift together the flour, baking powder, salt, cinnamon, cloves, and nutmeg. Set aside.
  3. In a large bowl, cream together the butter and sugar using a hand mixer. Beat in the eggs one at a time until blended.
  4. Add the flour mixture to the sugar mixture alternately with the milk and Bob Evans Original Mashed Potatoes.
  5. Mix until the cake batter is well blended, scraping the sides of the bowl as needed. Fold in the walnuts and raisins.
  6. Pour the cake batter in the prepared bundt pan. Bake for 80-85 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cake on a wire rack for 10 minutes, then turn it out onto a plate to completely cool.
  8. Once the cake is cool, dust the top with powdered sugar. Store in an airtight container at room temperature.
