Recipe Ingredients

2 pkg.
corn muffin mix

eggs
For a sweeter muffin add (optional): 1 Tbsp. granulated sugar, ¼ tsp. pumpkin pie spice

Instructions

Preheat oven to 400F.

Grease muffin tin with nonstick spray.

Mix all ingredients together in large mixing bowl.

Allow mix to rest for 2 minutes.

Pour into prepared muffin tin.

Bake for 20 -25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Allow muffins to cool at room temperature on a cooling rack. Serve with cinnamon sugar butter.
