Ingredients

  • 1 lb. Bob Evans Italian Roll Sausage
  • 1 box jambalaya style rice mix (8 oz)
  • 2 cans stewed tomatoes with onion, celery and green pepper, undrained (14.5 oz)
  • chopped parsley and sliced green onions (optional)
  • 1 cup water
  • 1 cup cooked diced chicken
  • 6 oz. tomato juice
  • 1/2 lb. uncooked medium shrimp, peeled and de-veined

Directions

  1. Step 1

    In large skillet or Dutch oven over medium heat, crumble and cook sausage until browned.

  2. Step 2

    Add rice mix, tomatoes, water, chicken, and tomato juice.

  3. Step 3

    Stir well and bring to a boil. Reduce heat to low, simmer covered for 30 minutes.

  4. Step 4

    Add shrimp; simmer 5 minutes more until shrimp turn pink and opaque.

  5. Step 5

    Garnish with parsley and green onions, if desired. Serve hot. Refrigerate leftovers.
