To begin the macaroni croquettes, start off by using your hands or an ice cream scoop to scoop out macaroni and roll it into 1-2-inch balls. NOTE: You can scoop the macaroni balls and put them on a tray in the freezer for 5 to 10 minutes to become firmer.
Next, beat eggs in a bowl.
Add flour, salt, pepper and bread crumbs in another bowl.
Take macaroni balls and roll them in flour, then in the egg mixture, and finally in the bread crumbs.
Heat vegetable oil in a saucepan over medium heat and fry the balls until golden brown. Drain the excess oil and serve with avocado sauce. NOTE: You can also use an air fryer instead of the oil if you want a healthier option.
To make the avocado sauce, place the avocado, sour cream or yogurt, red onion and lime juice in the blender. Pulsate until completely smooth, then add salt and pepper along with flax seeds and chopped spinach.
Store in an airtight container and refrigerate. NOTE: Sauce will last up to three days.
