Bob Evans® Shepherd’s Pie

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 2 twigs fresh thyme
  • 16 ounces ground beef
  • 2 teaspoons Worcestershire sauce
  • 4 cups mixed frozen vegetables
  • 5 ounces crushed tomatoes
  • 5 ounces beef stock
  • ½ teaspoon sea salt
  • ⅛ teaspoon freshly ground black pepper
  • 2 tablespoons water
  • 1 container Bob Evans® Family Size Original Mashed Potatoes
  • 1 cup cheddar cheese, grated (optional)
  • NOTE: You can also mix 8 ounces of ground beef with 8 ounces of Bob Evans® Original Roll Sausage or substitute Bob Evans® Original Roll Sausage for the ground beef.
Bob Evans® Shepherd’s Pie


  1. Preheat oven to 375° F.
  2. Heat a skillet and add the olive oil. Add the diced onion, minced garlic and thyme. Sweat until transparent, then add the beef and Worcestershire sauce and cook until done. Drain off any excess fat.
  3. Next, add the mixed frozen vegetables, crushed tomatoes and beef stock. Add salt and pepper as needed. While the mixture simmers, mix cold water and cornstarch in a separate bowl to make a slurry. Add the slurry gradually to the mixture until it becomes thicker. NOTE: You may or may not have to use all of the slurry
  4. Pour the entire mixture into a 9 x 13-inch casserole dish.
  5. Spread Bob Evans® Original Mashed Potatoes evenly over the top. Optional: Sprinkle cheese on top of the potatoes.
  6. Bake for 25 to 30 minutes or until cooked completely.
