Recipe Ingredients

1/2 cup
fresh chopped spinach
1/4 cup
diced red pepper
1/4 cup
bacon crumbles
1/4 cup
cooked and diced breakfast sausage
1/4 cup
Feta cheese
1/8 tsp
salt
1/8 tsp
pepper

Instructions

Preheat oven to 350 degrees, and spray mini-muffin tin with olive oil.

Set out individual bowls of chopped spinach, diced red peppers, bacon crumbles, and diced sausage for your family or guests.

Add Bob Evans 100% liquid eggs to individual muffin cups until full (approximately 1 tablespoon for each mini-frittata). Sprinkle with salt and pepper.

Bake for 15–20 minutes or until visibly set. Cool and enjoy!
