Reward and refuel your body post-workout with this mega-mélange of delicious superfoods, protein rich grains and Bob Evans liquid egg whites .

Recipe Ingredients

1/2 cup
cooked black lentils
1/2 cup
cooked farro (or brown rice or quinoa)
2 cups
arugula
1/2 cup
grape tomatoes
2 tbsp
hummus of choice
1/4 cup
feta cheese crumbles
1/2
avocado
1/2 cup
broccoli
optional: olive oil and lemon drizzle

Instructions

Prepare both farro and lentils in advance to have on hand. Reheat as necessary.

In a large bowl add arugula. Top with farro and black lentils. Add tomatoes, avocado, hummus, broccoli and feta cheese.

Heat a small non-stick skillet to medium heat. Add olive oil for cooking. Pour Bob Evans into skillet. Allow to set to desired doneness (3-4 min).

Transfer Bob Evans atop of prepared bowl. Drizzle with olive oil and lemon. Serve.
