In a large skillet over medium low heat, melt butter and sauté onions until golden brown. Stir constantly. About 20 minutes.
In a large mixing bowl, combine Bob Evans White Cheddar Mashed Potatoes, ricotta, black pepper, ½ c. shredded cheddar, eggs and heavy cream. Set aside.
Spray a 9x13 baking dish with non-stick spray.
Spread ½ c. of mashed potato mixture on bottom of the baking dish. Layer 3 lasagna noodles, 1/3 of mashed potato mixture, 1/3 of sautéed onions, 1/3 of diced bacon and ¼ c. of cheddar cheese. Repeat for 2 more layers.
Cover lasagna with aluminum foil and bake for 25 minutes.
Remove foil and bake an additional 25-30 minutes.
Carefully remove from oven and allow to set for 10 minutes before serving.
