Sausage Stuffed Manicotti Shells

A warm and hearty Italian-style dish, made flavorful with Bob Evans Italian Pork Sausage. Great for making ahead, refrigerating and reheating on a day when you know the dinner hour will be busy.

Ingredients

  • 8 manicotti shells
  • 1 Pound Bob Evans Italian Pork Sausage Roll
  • 1/4 Cup onion chopped
  • 1/4 Teaspoon garlic minced
  • 10 Ounces frozen chopped spinach thawed and squeezed dry
  • 1/2 Cup parmesan cheese grated
  • 1/2 Teaspoon dried oregano leaves
  • 16 Ounces Alfredo sauce divided
  • 26-28 Ounces tomato-based spaghetti sauce
  • 2 1/2 Cups mozzarella cheese shredded

Instructions

  1. Preheat oven to 375F.
  2. Cook manicotti according to package directions. Drain and set aside to cool.
  3. In medium skillet over medium heat cook Bob Evans Italian Sausage, onion and garlic until sausage is browned.
  4. Stir in spinach, Parmesan cheese, oregano and 1/4 cup Alfredo sauce.
  5. Spoon filing into manicotti shells.
  6. Pour just enough spaghetti sauce on bottom of 9 x 13 inch pan to coat surface.
  7. Arrange stuffed manicotti over sauce in single layer.
  8. Pour remaining spaghetti sauce over manicotti. Top with remaining Alfredo sauce. Sprinkle with mozzarella cheese.
  9. Bake 20 minutes or until heated through and sauce is bubbling. If desired, place under broiler to brown cheese.
