1 pkg. | Bob Evans Original Mashed Potatoes |
2 | loaves Crusty Italian Bread |
1/3 lb. | thickly sliced corned beef cut into ½ inch pieces (available at grocery deli) |
1 can | sauerkraut, drained (14 oz.) |
1 tablespoon | spicy brown mustard |
1 cup | Shredded Swiss cheese |
Thousand Island dressing, for dipping |
1 | Preheat oven to 400 F. |
2 | Using a serrated knife, cut an oval in the top of the Italian bread scooping out the bread to create a well. Place on baking sheet. |
3 | In a large mixing bowl, mix together remaining ingredients. |
4 | Divide mixture between two loaves of bread. |
5 | Cover with foil and bake 30 minutes. |
6 | Remove foil after 30 minutes and continue baking for an additional 30 minutes. |
7 | Carefully remove from oven and allow to cool for 5 minutes before serving. |
8 | Serve with a side of Thousand Island dressing. |
