Greek Potato Dip

Herby and lemony, this potato-based dip is oh so fresh. It's a little unexpected, but in a good way.

  • 1 Cup slivered almonds
  • 1/4 Cup olive oil
  • 5 Tablespoons lemon juice
  • 4 Cloves garlic
  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 1 green onion diced
  • 1 Tablespoon parsley minced
  • 1 Tablespoon dill minced
  • 18 Ounces baked pita chips


  1. Preheat oven to 400°F.
  2. Process almonds, olive oil, lemon juice, and garlic in a food processor until a paste forms. Spoon into a large bowl.
  3. Add mashed potatoes, green onion, parsley, and dill; stir until blended.
  4. Spoon into a 1-quart baking dish. Bake 20 to 25 minutes or until thoroughly heated.
  5. Serve with pita chips.

Garnish with fresh dill, if on hand.
