  • 2 Tablespoons butter
  • 1 Cup onion chopped
  • 2 Cloves garlic minced
  • 2 Tablespoons all purpose flour
  • 3 Cups chicken broth
  • 1 1/2 Cups milk
  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 12 Ounces frozen corn
  • 1 Teaspoon salt
  • 1/2 Teaspoon pepper
  • 1 Cup paremsan cheese freshly shredded
  • 2 Tablespoons fresh tyme minced, divided


  1. Melt butter in a Dutch oven over medium heat. Add onion and garlic; cook, stirring occasionally, until onion is tender.
  2. Add flour; cook, stirring constantly, 2 minutes.
  3. Gradually stir in broth and milk. Cook, stirring occasionally, until slightly thickened.
  4. Stir in mashed potatoes, corn, salt, and pepper. Cook, stirring occasionally, until soup is thoroughly heated.
  5. Stir in cheese and 1 Tbsp thyme. Garnish soup with additional cheese and remaining thyme, if desired.
