Ingredients

  • 1 ½ Cup Bob Evans Family Size Original Mashed Potatoes
  • 1 Pound lean ground beef
  • 1 Egg
  • ½ Cup breadcrumbs
  • 1 Teaspoon garlic powder
  • 1 Teaspoon onion powder
  • 1 Teaspoon dried parsley
  • 1 Teaspoon Salt
  • ½ Teaspoon black pepper
  • Swedish style gravy to serve
  • Parsley for garnish

Instructions

  1. Preheat the oven to 375ºF and line a baking sheet.
  2. n a medium bowl, combine the ground beef, breadcrumbs, garlic, onion, parsley, salt and pepper. Mix well.
  3. Divide the meat mixture into roughly 18-20 equal portions.
  4. Roll each portion into a ball, then flatten.
  5. Add a spoonful of mashed potato to the center of each, and form the meat up over the sides to cover completely, shaping back into a ball.
  6. Arrange the stuffed meatballs on the sheet with space between them, and bake for 25-30 minutes, until cooked through.
