Ingredients

  • 16 Ounces Bob Evans Original Roll Pork Sausage
  • 1 Cup onion, chopped
  • 15 Ounces great Northern beans, rinsed and drained
  • 14.5 Ounces fire roasted diced tomatoes
  • 10 Ounces frozen chopped spinach, thawed and squeezed dry
  • 2 Teaspoons Italian seasoning
  • 8 Cups water
  • 2 Teaspoons white vinegar
  • 6 Large eggs
  • 6 Slices frozen garlic toast

Instructions

  1. Cook sausage and onion in a large skillet over medium heat until sausage is browned and crumbly.
  2. Stir in beans, tomatoes, spinach, and seasoning; cook until mixture is very thick.
  3. Meanwhile, bring water and vinegar to a simmer in a saucepan over medium-high heat.
  4. Gently crack eggs, 3 at a time, into simmering water; cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness.
  5. Prepare garlic toast according to package directions.
  6. Divide toast among 6 plates.
  7. Top with sausage mixture and a poached egg.
