Ingredients
- 20 Ounces Simply Potatoes Shredded Hash Browns
- ¾ Cup shredded pepper Jack cheese
- 1 Teaspoon garlic salt
- 3 Large eggs lightly beaten
- 2 Avocados peeled and pitted
- 2 Tablespoons fresh lime juice
- 1 Cup pico de gallo
- ⅓ Cup grated Cotija cheese

- Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
- Place potatoes in a large bowl. Stir in cheese and garlic salt. Add beaten eggs, stirring until blended.
- Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with nonstick cooking spray.
- Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp. Repeat procedure with remaining potato mixture.
- Meanwhile, mash avocado with lime juice in a bowl using a fork or potato masher. Season with salt and pepper, if desired.
- Spread avocado mixture over waffles. Top with pico de gallo and grated cheese.
