Ingredients

  • 20 Ounces Simply Potatoes Shredded Hash Browns
  • ¾ Cup shredded pepper Jack cheese
  • 1 Teaspoon garlic salt
  • 3 Large eggs lightly beaten
  • 2 Avocados peeled and pitted
  • 2 Tablespoons fresh lime juice
  • 1 Cup pico de gallo
  • ⅓ Cup grated Cotija cheese

Instructions

  1. Place hash browns between layers of paper towels; roll up, and squeeze liquid from potatoes.
  2. Place potatoes in a large bowl. Stir in cheese and garlic salt. Add beaten eggs, stirring until blended.
  3. Preheat waffle iron according to manufacturer's directions. Spray both sides of iron with nonstick cooking spray.
  4. Spoon about 1 cup potato mixture onto waffle iron; close and cook 5 minutes or until browned and crisp. Repeat procedure with remaining potato mixture.
  5. Meanwhile, mash avocado with lime juice in a bowl using a fork or potato masher. Season with salt and pepper, if desired.
  6. Spread avocado mixture over waffles. Top with pico de gallo and grated cheese.
