  • 6 Slices bacon
  • 1 Cup celery diced
  • 3 green onions sliced
  • 1 Package Simply Potatoes Diced Potatoes
  • 1/2 Cup mayonnaise
  • 1/4 Cup red wine vinegar
  • 2 Teaspoons honey
  • 1 Teaspoon Dijon mustard
  • 1 Cup fontina cheese shredded


  1. Preheat oven to 350°F.
  2. Cook bacon in a large skillet over medium heat until crisp. Remove bacon from skillet, reserving 2 Tbsp drippings in skillet.
  3. Add celery and onions to hot drippings; cook, stirring, 5 minutes or until vegetables are tender. Remove from heat, and stir in potatoes, mayonnaise, vinegar, honey, Dijon, cheese, and bacon; season with salt and pepper, if desired.
  4. Spoon mixture into a lightly greased 11- x 7-inch baking dish. Bake 30 to 35 minutes or until potatoes are tender.
