Ingredients
- 1 ½ Cup Bob Evans Family Size Original Mashed Potatoes
- 1 Pound lean ground beef
- 1 Egg
- ½ Cup breadcrumbs
- 1 Teaspoon garlic powder
- 1 Teaspoon onion powder
- 1 Teaspoon dried parsley
- 1 Teaspoon Salt
- ½ Teaspoon black pepper
- Swedish style gravy to serve
- Parsley for garnish

- Preheat the oven to 375ºF and line a baking sheet.
- n a medium bowl, combine the ground beef, breadcrumbs, garlic, onion, parsley, salt and pepper. Mix well.
- Divide the meat mixture into roughly 18-20 equal portions.
- Roll each portion into a ball, then flatten.
- Add a spoonful of mashed potato to the center of each, and form the meat up over the sides to cover completely, shaping back into a ball.
- Arrange the stuffed meatballs on the sheet with space between them, and bake for 25-30 minutes, until cooked through.
