Our mac and cheese combined with chicken, artichoke, red peppers, olives, and other delicious ingredients turn it into a fabulous Mediterranean-style version macaroni and cheese.
1 can (14.5 oz) quartered artichoke hearts in brine, drained and chopped
1/2 cup roasted red peppers, chopped
1/3 cup feta cheese, crumbled
10 kalamata olives, chopped
fresh parsley, chopped for garnish (optional)
Instructions
Preheat oven to 375F.
Spray a small casserole dish with nonstick spray.
In a medium bowl, combine the macaroni and cheese, chicken, artichoke hearts and peppers.
Spoon into prepared dish and sprinkle with feta and olives.
Bake 25 to 30 minutes or until heated through. Alternately, you can choose to microwave this dish for 6-8 minutes, until heated through.
Garnish with parsley, and serve.
