  • 20 Ounces Bob Evans Macaroni & Cheese
  • 2 Cups roasted chicken breast
  • 14.5 Ounces quartered artichoke hearts in brine drained and chopped
  • 1/2 Cup roasted red peppers chopped
  • 1/3 Cup feta cheese crumbled
  • 10 kalamata olives chopped
  • Fresh parsley chopped for garnish (optional)


  1. Preheat oven to 375F. Spray a small casserole dish with nonstick spray.
  2. In a medium bowl, combine the macaroni and cheese, chicken, artichoke hearts and peppers. Spoon into prepared dish and sprinkle with feta and olives.
  3. Bake 25 to 30 minutes or until heated through. Alternately, you can choose to microwave this dish for 6-8 minutes, until heated through.
  4. Garnish with parsley and serve.
