Bring large pot of salted water to a boil. Meanwhile, in a large bowl, mix potatoes, flour, egg and salt.
Stir until well combined, adding more flour is too sticky.
Divide dough into 4 parts, flour board.
Roll each into a ¾” rope and cut each rope into 1” pieces. (if desired, roll each piece on the back of a fork to make ridges)
In 2 batches, boil gnocchi 2 minutes or until pasta floats. Drain well and add to serving bowl.
For sauce, melt butter over medium heat until light golden brown.
Add sage and heat for 1 minute.
Add Parmesan to serving bowl and add butter sauce.
Gently toss before serving. (Can also be served with a tomato pasta sauce)
