Potato Gnocchi with Sage Brown Butter

Ingredients

  • 1 pkg. Bob Evans Garlic Mashed Potatoes
  • 1 - 1 1/2 cups flour
  • 1 egg, lightly beaten
  • 1/2 teaspoon salt
  • 8 tablespoons butter
  • 18 sage leaves
  • 1/2 cup grated Parmesan cheese
Potato Gnocchi with Sage Brown Butter

Instructions

  1. Bring large pot of salted water to a boil. Meanwhile, in a large bowl, mix potatoes, flour, egg and salt.
  2. Stir until well combined, adding more flour is too sticky.
  3. Divide dough into 4 parts, flour board.
  4. Roll each into a ¾” rope and cut each rope into 1” pieces. (if desired, roll each piece on the back of a fork to make ridges)
  5. In 2 batches, boil gnocchi 2 minutes or until pasta floats. Drain well and add to serving bowl.
  6. For sauce, melt butter over medium heat until light golden brown.
  7. Add sage and heat for 1 minute.
  8. Add Parmesan to serving bowl and add butter sauce.
  9. Gently toss before serving. (Can also be served with a tomato pasta sauce)
