A vegetable flavored rice mix makes easy work of this sausage casserole.


  • 1 lb. Bob Evans Zesty Hot Roll Sausage
  • 1 box vegetable flavor rice mix (5.8 oz)
  • 2 tablespoons butter or margarine
  • 1 cup celery, chopped
  • 1 pkg. frozen green, red, and yellow peppers and onions (16 oz)
  • 1 can condensed cream of mushroom soup (10.5 oz)
  • 1 cup milk
  • salt and pepper to taste
  • 1/2 cup shredded Colby cheese (2 oz)
Rice & Sausage Casserole


  1. Preheat oven to 350F.
  2. Cook rice according to package directions. Transfer to large bowl.
  3. In medium skillet, cook and crumble sausage until brown.
  4. Stir sausage, vegetables, soup, milk, salt and pepper into cooked rice; mix well.
  5. Spoon mixture into lightly greased 2-quart baking dish. Sprinkle with cheese.
  6. Bake uncovered, 40 minutes or until heated through, serve hot. Refrigerate leftovers.
