- 1 Cup onion, chopped
- 15 Ounces great Northern beans, rinsed and drained
- 14.5 Ounces fire roasted diced tomatoes
- 10 Ounces frozen chopped spinach, thawed and squeezed dry
- 2 Teaspoons Italian seasoning
- 8 Cups water
- 2 Teaspoons white vinegar
- 6 Large eggs
- 6 Slices frozen garlic toast

- Cook sausage and onion in a large skillet over medium heat until sausage is browned and crumbly.
- Stir in beans, tomatoes, spinach, and seasoning; cook until mixture is very thick.
