Ingredients

  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 1 Smoked Pork Loin
  • ½ Cup chicken broth
  • 8 Ounces Cheddar cheese shredded
  • 1 Cup barbecue sauce
  • 8 Ounces sour cream
  • 6 Green onions diced

Instructions

  1. Place pork in a 6 quart slow cooker; add broth.
  2. Cover, and cook on low 4 hours.
  3. Using 2 forks, shred pork.
  4. Meanwhile, heat mashed potatoes according to package directions.
  5. Divide potatoes among 6 bowls.
  6. Top with cheese and shredded pork.
  7. Drizzle with barbecue sauce.
  8. Top with desired amount of sour cream and green onions.
  9. Note: Cook pork in an Instant Pot for even faster results.
