Stuffed Reuben Bread

Ingredients

  • 1 pkg. Bob Evans Original Mashed Potatoes
  • 2 loaves Crusty Italian Bread
  • 1/3 lb. thickly sliced corned beef cut into ½ inch pieces (available at grocery deli)
  • 1 can sauerkraut, drained (14 oz.)
  • 1 tablespoon spicy brown mustard
  • 1 cup Shredded Swiss cheese
  • Thousand Island dressing, for dipping

Instructions

  1. Preheat oven to 400 F.
  2. Using a serrated knife, cut an oval in the top of the Italian bread scooping out the bread to create a well. Place on baking sheet.
  3. In a large mixing bowl, mix together remaining ingredients.
  4. Divide mixture between two loaves of bread.
  5. Cover with foil and bake 30 minutes.
  6. Remove foil after 30 minutes and continue baking for an additional 30 minutes.
  7. Carefully remove from oven and allow to cool for 5 minutes before serving.
  8. Serve with a side of Thousand Island dressing.
