  • 2 pkg. corn muffin mix
  • 1 pkg. Bob Evans Mashed Sweet Potatoes
  • 2 eggs
  • For a sweeter muffin add (optional): 1 Tbsp. granulated sugar, ¼ tsp. pumpkin pie spice
Sweet Potato Cornbread Muffins


  1. Preheat oven to 400F.
  2. Grease muffin tin with nonstick spray.
  3. Mix all ingredients together in large mixing bowl.
  4. Allow mix to rest for 2 minutes.
  5. Pour into prepared muffin tin.
  6. Bake for 20 -25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow muffins to cool at room temperature on a cooling rack. Serve with cinnamon sugar butter.
