  • 2 Packages corn muffin mix
  • 1 Package Bob Evans Mashed Sweet Potatoes
  • 2 eggs
  • 1 Tablespoon granulated sugar (optional)
  • 1/4 Teaspoon pumpkin pie spice (optional)


  1. Preheat oven to 400F. Grease muffin tin with nonstick spray.
  2. Mix all ingredients together in large mixing bowl. Allow mix to rest for 2 minutes.
  3. Pour into prepared muffin tin. Bake for 20 -25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  4. Allow muffins to cool at room temperature on a cooling rack. Serve with cinnamon sugar butter.
