Mini Sausage Egg Bites

These mini sausage egg bites are a great protein-packed breakfast option that can be made ahead and frozen for future meals.

Ingredients

Instructions

  1. Preheat oven to 350 degrees. Spray muffin pan with nonstick spray and dice onion and pepper.
  2. Brown sausage links in a skillet over medium-high heat. Add diced onion into skillet, cooking until translucent. Set aside to cool.
  3. Add 1½ cups liquid egg whites into a bowl with chili powder, diced pepper and shredded cheese, stirring to combine.
  4. Using a ladle or measuring cup, spoon the egg mixture into muffin cups until three-quarters full. Cut sausage links into bite-sized pieces and add two or three into each muffin cup, making sure not to overfill.
  5. Bake at 350 for 20 minutes or until eggs are set and cheese has formed a crust. Serve warm or freeze by placing cooled bites into a freezer-safe bag.

Reheat from frozen by thawing for one minute, then microwaving for another minute.
