
Pork Sausage Breakfast Burrito
These grab-and-go breakfast burritos are filled with scrambled eggs, sausage, cheddar, and pico de gallo. Quick to assemble and bursting with bold flavor for any meal of the day.
Ingredients
- 1 package Bob Evans Italian Pork Sausage Roll
- 6 burrito flour tortillas
- 10 large eggs
- Salt and pepper (optional)
- 1 1/2 cups shredded cheddar cheese divided
- 14 ounces pico de gallo
- Cilantro (optional)

- Cook sausage in a large nonstick skillet over medium heat until browned and crumbly. Remove sausage from skillet with a slotted spoon, reserving drippings in skillet.
- Divide sausage among center third of each tortilla. Meanwhile, whisk together eggs in a large bowl until blended. Season with salt and pepper, if desired.
- Add beaten eggs to hot drippings in skillet and cook over medium heat, without stirring until eggs begin to set on bottom. Cook, stirring constantly, until thickened and set.
- Spoon scrambled eggs over sausage on tortillas. Top each with ¼ cup cheese and desired amount of pico de gallo.
- Fold edges of tortillas in and roll up to completely enclose filling. Cut in half to serve. Garnish with chopped fresh cilantro, if on hand.
