Ingredients

  • 1 package Bob Evans Italian Pork Sausage Roll
  • 6 burrito flour tortillas
  • 10 large eggs
  • Salt and pepper (optional)
  • 1 1/2 cups shredded cheddar cheese divided
  • 14 ounces pico de gallo
  • Cilantro (optional)

Instructions

  1. Cook sausage in a large nonstick skillet over medium heat until browned and crumbly. Remove sausage from skillet with a slotted spoon, reserving drippings in skillet.
  2. Divide sausage among center third of each tortilla. Meanwhile, whisk together eggs in a large bowl until blended. Season with salt and pepper, if desired.
  3. Add beaten eggs to hot drippings in skillet and cook over medium heat, without stirring until eggs begin to set on bottom. Cook, stirring constantly, until thickened and set.
  4. Spoon scrambled eggs over sausage on tortillas. Top each with ¼ cup cheese and desired amount of pico de gallo.
  5. Fold edges of tortillas in and roll up to completely enclose filling. Cut in half to serve. Garnish with chopped fresh cilantro, if on hand.
