Ingredients
- 12 Ounces Bob Evans Single Serve Original Mashed Potatoes
- 6 Slices sourdough bread sliced
- 3 Roma tomatoes sliced
- 2½ Cups shredded rotisserie chicken
- 1 Cup barbecue sauce
- 8 Ounce shredded Colby Jack cheese
- 2 Green onions sliced

- Preheat oven to 400°F.
- Arrange toast on a parchment paper-lined rimmed baking sheet.
- Spread mashed potatoes over toasts. Top with tomato slices.
- Toss together chicken and barbecue sauce in a microwave-safe bowl.
- Microwave on HIGH until thoroughly heated.
- Spoon over mashed potatoes.
- Sprinkle with cheese.
- Bake 20 minutes or until hot and bubbly.
- Sprinkle with green onions, and drizzle with additional barbecue sauce, if desired.
