French Onion Mashed Potato Cakes

Our mashed potatoes are always an excellent choice and topping them with caramelized onions takes things up a level. These tangy potato cakes are delectable.

Ingredients

  • 2 onions thinly sliced
  • 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 24 Ounces Bob Evans Original Mashed Potatoes
  • 2 Cups panko breadcrumbs
  • 2 Cups Gruyere cheese shredded, divided
  • 2 Large eggs lightly beaten
  • 1 Tablespoon fresh thyme minced

Instructions

  1. Preheat oven to 425°F.
  2. Cook onions in hot oil in a large skillet over medium heat, covered, 5 minutes or until onions are almost tender; stir in 2 Tbsp vinegar. Uncover, and cook 15 minutes longer, stirring occasionally, until onions are browned and tender, stirring often.
  3. Meanwhile, stir together mashed potatoes, breadcrumbs, 1 cup cheese, beaten eggs, and thyme. Form mixture into patties, about 1-inch thick.
  4. Spread caramelized onions over tops of patties, and sprinkle with remaining cheese.
  5. Bake 15 to 20 minutes or until browned and crisp.
  6. Garnish with additional fresh thyme leaves.

Use a biscuit cutter or ring mold to form perfect patties.
