Mexican Street Corn Walking Tacos

Ingredients
- 16 Ounces Bob Evans Original Roll Pork Sausage
- ½ Cup chopped onion
- 2 Teaspoons ground cumin
- 2 Cups frozen corn kernels thawed
- 2 Tablespoons mayonnaise
- 2 Tablespoons chopped fresh cilantro
- 1 Lime zested and juiced
- 1 Ounce bags corn chips
- ½ Cup grated cotija cheese
- 1 Lime cut into wedges

- Cook sausage and onion in a large skillet over medium heat until browned and crumbly; drain, if needed, and return to skillet.
- Stir in cumin. Season with salt and pepper, if desired.
- Meanwhile, stir together corn, mayonnaise, cilantro, and lime zest and juice. Season with salt and pepper, if desired.
- To serve, cut open chip bags, and fill each with desired amount of sausage mixture.
- Top with corn mixture and cheese. Serve with lime wedges.
Note: Garnish with fresh cilantro leaves, if on hand.
