Ingredients

  • 2 Cup all purpose flour
  • ¾ Cup granulated sugar
  • ½ Cup Dutch processed cocoa
  • 1 Tablespoon baking powder
  • ½ Teaspoon ground cardamom
  • ½ Teaspoon salt
  • ¾ Cup sour cream
  • ½ Cup Egg Beaters Original Liquid Egg Substitute – 16 Ounces
  • ½ Cup milk
  • ½ Cup vegetable oil
  • 1 Cup mini semi sweet chocolate chips
  • 1 Cup chopped salted pistachios, divided
  • 4 Ounces semi sweet chocolate, melted

Instructions

  1. Preheat oven to 400°F.
  2. Stir together flour, sugar, cocoa, baking powder, cardamom and salt.
  3. Whisk together sour cream, egg substitute, milk and oil.
  4. Add to flour mixture stirring just until blended.
  5. Stir in chocolate chips and ¾ cup pistachios.
  6. Spoon batter into a 12-cup muffin pan lined with paper liners.
  7. Bake 18 to 24 minutes or until a wooden pick inserted in centers comes out clean.
  8. Drizzle with melted chocolate and sprinkle with remaining chopped pistachios.
