Ingredients

  • 32 Ounces cubed sweet potatoes
  • 1 Large red onion, cut into wedges
  • ¼ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 12 Ounces Bob Evans Original Pork Sausage Links
  • 12 Ounces broccoli florets
  • 1 Tbsp whole grain mustard
  • 1 Tbsp honey
  • 1 Tbsp soy sauce

Instructions

  1. Preheat oven to 450°F.
  2. Toss potatoes and onion with salt, pepper, and 1 Tbsp oil on a lightly greased rimmed baking sheet.
  3. Bake 10 minutes or until potatoes are just tender.
  4. Nestle sausage and broccoli around potatoes and onion.
  5. Bake 10 minutes longer or until sausages begin to brown.
  6. Meanwhile, whisk together 2 Tbsp oil, mustard, honey, and soy sauce.
  7. Drizzle vinaigrette over potatoes and sausage mixture.
