Maple Dijon Sausage and Apple Sheet Pan Breakfast

Ingredients

  • 2 Medium sweet potatoes peeled and cut into 1-inch cubes
  • 1 Large red onion cut into wedges
  • 2 Tablespoons olive oil
  • 2 Teaspoons chopped fresh rosemary
  • 1 Teaspoon fresh thyme
  • 1 Teaspoon kosher salt
  • ½ Teaspoon pepper
  • 12 Ounces Bob Evans Original Pork Sausage Links
  • 2 Honeycrisp apples cored and cut into wedges
  • 3 Tablespoons maple syrup
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon apple cider
  • 1 Tablespoon melted butter
  • 1 Teaspoon apple cider vinegar
  • ½ Teaspoon smoked paprika
  • 6 Frozen biscuits

Instructions

  1. Preheat oven to 425°F.
  2. Toss together sweet potatoes, onion, oil, rosemary, thyme, salt, and pepper together on a large rimmed baking sheet pan.
  3. Spread in a single layer, and bake 15 minutes.
  4. Toss together sausage links, apples, maple syrup, Dijon, apple cider, melted butter, vinegar, and paprika on a separate large rimmed baking sheet pan.
  5. Spread in a single layer and add to oven with sweet potatoes. Bake 15 minutes or until sausages are done and sweet potatoes are browned and tender.
  6. Meanwhile, bake biscuits according to package directions. Toss together sweet potato mixture and sausage mixture.
  7. Divide among plates and serve with biscuits.
