  • 2 Cups butternut or acorn squash cubed
  • 1 zucchini cut into 1/2" slices
  • 1 Tablespoon olive oil
  • 1/4 Cup Kalamata olives sliced
  • 1 Tablespoon capers drained
  • 1/2 Tablespoon basil minced
  • 1/2 Tablespoon parsley minced
  • 1 Package Bob Evans Original Mashed Potatoes
  • 1 Cup Owens Original Pork Sausage Roll cooked and crumbled
  • 2 Tablespoons parmesan cheese shredded


  1. Preheat oven to 425°F. Place squash and zucchini on a rimmed baking sheet and toss with oil. Roast for 15 to 20 minutes or until tender and browned. Remove from oven and stir in olives, capers and herbs.
  2. Prepare Bob Evans Original Mashed Potatoes by following recommended microwave instructions on the package.
  3. Place about 1/4 package of mashed potatoes into each martini glass.
  4. Top mashed potatoes with 1/4 of cooked vegetables.
  5. Place 1/4 cup crumbled sausage over vegetables and sprinkle each with 1/2 tablespoon parmesan cheese.
