Chili Macaroni & Cheese Cups
Comfort food meets bold flavor in these hearty, handheld cups! Creamy Bob Evans® Macaroni & Cheese is combined with zesty chili-seasoned ground beef, diced onion, and a touch of spice for a savory kick.
Ingredients
- ½ Pound ground beef
- ½ Cup diced onion
- 1 Ounce chili seasoning mix
- ½ Cup water
- 20 Ounces Bob Evans Macaroni & Cheese
- 8 Ounces pepper Jack cheese shredded
- 2 Large eggs lightly beaten
- ½ Cup sour cream

- Preheat oven to 375°F. Cook beef and onion in a skillet over medium heat until beef is browned and crumbly; drain, and return to skillet.
- Stir in chili seasoning and water; cook until mixture is very thick.
- Stir in macaroni & cheese and shredded cheese until blended.
- Remove from heat, and let cool 10 minutes. Stir in beaten eggs.
- Spoon mixture into 12 muffin cups sprayed with non-stick spray.
- Bake 18 to 22 minutes or until edges are golden brown and centers are set.
- Let cool in pans 10 minutes. Remove from pans and top with sour cream.
Note: Garnish with fresh cilantro leaves, if on hand.
