Ingredients

  • ½ Pound ground beef
  • ½ Cup diced onion
  • 1 Ounce chili seasoning mix
  • ½ Cup water
  • 20 Ounces Bob Evans Macaroni & Cheese
  • 8 Ounces pepper Jack cheese shredded
  • 2 Large eggs lightly beaten
  • ½ Cup sour cream

Instructions

  1. Preheat oven to 375°F. Cook beef and onion in a skillet over medium heat until beef is browned and crumbly; drain, and return to skillet.
  2. Stir in chili seasoning and water; cook until mixture is very thick.
  3. Stir in macaroni & cheese and shredded cheese until blended.
  4. Remove from heat, and let cool 10 minutes. Stir in beaten eggs.
  5. Spoon mixture into 12 muffin cups sprayed with non-stick spray.
  6. Bake 18 to 22 minutes or until edges are golden brown and centers are set.
  7. Let cool in pans 10 minutes. Remove from pans and top with sour cream.

Note: Garnish with fresh cilantro leaves, if on hand.
