  1. Cook potatoes in hot oil in a large skillet over medium-high heat, covered, 15 minutes, stirring every 3 to 4 minutes or until potatoes are browned and crisp.
  2. Remove from skillet, and keep warm.
  3. Add chorizo, bell peppers, and onion to skillet, and cook over medium heat until chorizo is browned and crumbly and vegetables are tender.
  4. Add potatoes to skillet, and cook until thoroughly heated.
  5. Stir in cilantro.
  6. Enjoy!
