Ingredients
- 20 Ounces Simply Potatoes Signature Seasoned Diced Potatoes
- 2 Tablespoons olive oil
- 1 Pound Mexican chorizo casings removed
- 1 Red bell pepper chopped
- 1 Green bell pepper chopped
- 1 Cup chopped onion
- 3 Tablespoons chopped fresh cilantro

- Cook potatoes in hot oil in a large skillet over medium-high heat, covered, 15 minutes, stirring every 3 to 4 minutes or until potatoes are browned and crisp.
- Remove from skillet, and keep warm.
- Add chorizo, bell peppers, and onion to skillet, and cook over medium heat until chorizo is browned and crumbly and vegetables are tender.
- Add potatoes to skillet, and cook until thoroughly heated.
- Stir in cilantro.
