Ingredients

  • 20 Ounces Simply Potatoes Shredded Hash Browns
  • ⅓ Cup butter melted
  • 1½ Pounds ground beef
  • 8 Ounces block Cheddar cheese shredded
  • 1 Cup barbecue sauce divided
  • 2 Tbsp Dijon mustard divided
  • 1 Tbsp Worcestershire sauce
  • ½ Cup mayonnaise
  • 1 Cup sliced dill pickles

Instructions

  1. Preheat oven to 425°F.
  2. Stir together potatoes and melted butter.
  3. Press potato mixture into bottoms and up sides of muffin cups with the back of a spoon.
  4. Bake 35 to 40 minutes or until potatoes are golden.
  5. Meanwhile, cook beef in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  6. Stir in 1 cup cheese, ½ cup barbecue sauce, 1 Tbsp Dijon, and Worcestershire.
  7. Spoon beef mixture into potato "cups".
  8. Sprinkle with 1 cup cheese and bake 5 minutes or until cheese is melted.
  9. Stir together mayonnaise, ½ cup barbecue sauce, and 1 Tbsp Dijon mustard.
  10. Top beef mixture with pickles and drizzle with sauce.
