Jalapeño Popper Macaroni & Cheese Bites
Calling all jalapeño lovers! These popper-like mac and cheese bites are right up your alley.
Ingredients
- 8 Slices bacon chopped
- 20 Ounces Bob Evans Macaroni & Cheese
- 4 Ounces cream cheese softened
- 2 jalapeños seeded and minced
- 3/4 Cup panko breadcrumbs
- 2 Large eggs lightly beaten

- Preheat oven to 400°F.
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels and place in a large bowl.
- Add macaroni and cheese, cream cheese, and jalapeños, stirring until blended.
- Add breadcrumbs and beaten eggs, stirring until blended.
- Spoon mixture into wells of a lightly greased (24-cup) miniature muffin pan. Bake 15 to 20 minutes or until golden brown.
Garnish with minced green onion, if on hand.
