Loaded Potato Bombs
Loaded Potato Bombs are crispy on the outside with a gooey cheese center, making them a fun, bite-sized comfort snack perfect for after-school cravings.
Ingredients
- 8 Ounces block mozzarella cheese
- 24 Ounces Bob Evans Loaded Mashed Potatoes
- ¾ Cup all purpose flour divided
- 2 Large eggs
- 1½ Cups panko breadcrumbs
- ¼ Cup grated Parmesan cheese
- 2 Tsp Italian seasoning
- ½ Cup Ranch dressing

- Cut cheese into 1-inch cubes.
- Stir ¼ cup flour into mashed potatoes until combined.
- Place remaining flour in a shallow dish.
- Lightly beat eggs in another shallow dish.
- Stir together breadcrumbs, Parmesan, and seasoning in a third shallow dish.
- Form potato mixture around cheese cubes.
- Dredge in flour to coat.
- Dip in beaten egg, letting excess drip off.
- Dredge in breadcrumb mixture to coat.
- Place on a lightly greased wire rack.
- Preheat air fryer to 400°F.
- Spray air fryer basket with olive oil cooking spray.
- Place mashed potato balls ½ inch apart in air fryer basket.
- Spray generously with cooking spray.
- Air fry, in batches, 6 to 8 minutes or until golden brown.
- Serve with Ranch dressing, for dipping.
