Ingredients

  • 8 Ounces block mozzarella cheese
  • 24 Ounces Bob Evans Loaded Mashed Potatoes
  • ¾ Cup all purpose flour divided
  • 2 Large eggs
  • 1½ Cups panko breadcrumbs
  • ¼ Cup grated Parmesan cheese
  • 2 Tsp Italian seasoning
  • ½ Cup Ranch dressing

Instructions

  1. Cut cheese into 1-inch cubes.
  2. Stir ¼ cup flour into mashed potatoes until combined.
  3. Place remaining flour in a shallow dish.
  4. Lightly beat eggs in another shallow dish.
  5. Stir together breadcrumbs, Parmesan, and seasoning in a third shallow dish.
  6. Form potato mixture around cheese cubes.
  7. Dredge in flour to coat.
  8. Dip in beaten egg, letting excess drip off.
  9. Dredge in breadcrumb mixture to coat.
  10. Place on a lightly greased wire rack.
  11. Preheat air fryer to 400°F.
  12. Spray air fryer basket with olive oil cooking spray.
  13. Place mashed potato balls ½ inch apart in air fryer basket.
  14. Spray generously with cooking spray.
  15. Air fry, in batches, 6 to 8 minutes or until golden brown.
  16. Serve with Ranch dressing, for dipping.
