  • 1 Package Bob Evans Original Mashed Potatoes
  • 6 Slices bacon cooked and crumbled
  • 1 Cup cheddar cheese shredded
  • 2 Large eggs divided
  • 2 Cups panko breadcrumbs divided
  • 1 Cup ranch dressing


  1. Stir together mashed potatoes, bacon, cheese, 1 egg, and 1 cup breadcrumbs. Shape mixture into 2 inch balls and place on a parchment paper-lined baking sheet. Cover, and refrigerate at least 4 hours or up to 2 days.
  2. Preheat air fryer to 400°F.
  3. Lightly beat remaining egg in a shallow bowl. Place remaining breadcrumbs in a separate bowl.
  4. Dip potato balls in egg; dredge in breadcrumbs to coat.
  5. Spray air fryer basket with olive oil cooking spray. Arrange potato balls, in a single layer, ½-inch apart, in basket. Air fry, in batches, 8 to 9 minutes or until potato balls are browned and crisp.
  6. Serve with dressing, for dipping.

Garnish with chopped fresh parsley, if on hand.
