Macaroni & Cheese Stuffed Mushrooms

Gourmet but fun. These mac and cheese stuffed mushrooms with some bacon to boot are sure to delight your inner child. Bonus? They're simple to make.

  • 6 Slices bacon chopped
  • 20 Ounces Bob Evans Macaroni & Cheese
  • 2 green onions minced
  • 24 Ounces whole baby portobello mushrooms stems removed
  • 3/4 Cup panko breadcrumbs
  • 2 Cloves garlic minced
  • 3 Tablespoons olive oil


  1. Preheat oven to 375°F.
  2. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels and place in a large bowl.
  3. Add macaroni and cheese and green onion, stirring until blended. Spoon mixture into mushroom caps and place on a parchment paper-lined rimmed baking sheet.
  4. Meanwhile, stir together breadcrumbs, garlic, and oil until blended. Sprinkle over macaroni and cheese-stuffed mushrooms.
