Maple Dijon Sausage and Apple Sheet Pan Breakfast
Sweet apples, maple-glazed sausage links, roasted sweet potatoes, and herbs come together on one sheet pan for a flavorful breakfast that's easy to prepare and even easier to clean up.
Ingredients
- 2 Medium sweet potatoes peeled and cut into 1-inch cubes
- 1 Large red onion cut into wedges
- 2 Tablespoons olive oil
- 2 Teaspoons chopped fresh rosemary
- 1 Teaspoon fresh thyme
- 1 Teaspoon kosher salt
- ½ Teaspoon pepper
- 12 Ounces Bob Evans Original Pork Sausage Links
- 2 Honeycrisp apples cored and cut into wedges
- 3 Tablespoons maple syrup
- 2 Tablespoons Dijon mustard
- 1 Tablespoon apple cider
- 1 Tablespoon melted butter
- 1 Teaspoon apple cider vinegar
- ½ Teaspoon smoked paprika
- 6 Frozen biscuits

- Preheat oven to 425°F.
- Toss together sweet potatoes, onion, oil, rosemary, thyme, salt, and pepper together on a large rimmed baking sheet pan.
- Spread in a single layer, and bake 15 minutes.
- Toss together sausage links, apples, maple syrup, Dijon, apple cider, melted butter, vinegar, and paprika on a separate large rimmed baking sheet pan.
- Spread in a single layer and add to oven with sweet potatoes. Bake 15 minutes or until sausages are done and sweet potatoes are browned and tender.
- Meanwhile, bake biscuits according to package directions. Toss together sweet potato mixture and sausage mixture.
- Divide among plates and serve with biscuits.
