Ingredients

  • 16 Ounces Bob Evans Original Roll Pork Sausage
  • ½ Cup chopped onion
  • 2 Teaspoons ground cumin
  • 2 Cups frozen corn kernels thawed
  • 2 Tablespoons mayonnaise
  • 2 Tablespoons chopped fresh cilantro
  • 1 Lime zested and juiced
  • 1 Ounce bags corn chips
  • ½ Cup grated cotija cheese
  • 1 Lime cut into wedges

Instructions

  1. Cook sausage and onion in a large skillet over medium heat until browned and crumbly; drain, if needed, and return to skillet.
  2. Stir in cumin. Season with salt and pepper, if desired.
  3. Meanwhile, stir together corn, mayonnaise, cilantro, and lime zest and juice. Season with salt and pepper, if desired.
  4. To serve, cut open chip bags, and fill each with desired amount of sausage mixture.
  5. Top with corn mixture and cheese. Serve with lime wedges.

Note: Garnish with fresh cilantro leaves, if on hand.
