Mini Sausage Pizzas

Let kids pick their own toppings for these mini pizzas, or serve them up as an appetizer at your next get-together.


  • 1 lb. Bob Evans Italian Roll Sausage
  • 6 mini Kaiser rolls (3-inch diameter)
  • 3/4 cup prepared marinara sauce
  • 1 pkg. frozen chopped spinach, thawed, well drained (10 oz)
  • 2 tablespoon Parmesan cheese, grated
  • 1 1/4 cups Shredded Mozzarella Cheese, divided
Mini Sausage Pizzas


  1. Preheat oven to 375F.
  2. Split rolls horizontally in half. Scoop out insides, leaving 1/2-inch thick shell; set aside.
  3. Cook sausage in large skillet on medium-high heat until browned and crumbled; drain well. Add marinara sauce, spinach, Parmesan cheese and 1/2 cup of the shredded Mozzarella; mix well.
  4. Spoon 1/4 cup sausage mixture into each hollowed out roll. Sprinkle each with 1 tablespoon shredded Mozzarella. Place on baking sheet.
  5. Bake 12 to 15 minutes or until cheese is melted. Try with English muffins for an even more kid-friendly appeal!
