1 pkg. frozen chopped spinach, thawed, well drained (10 oz)
2 tablespoon Parmesan cheese, grated
1 1/4 cups Shredded Mozzarella Cheese, divided
Instructions
Preheat oven to 375F.
Split rolls horizontally in half. Scoop out insides, leaving 1/2-inch thick shell; set aside.
Cook sausage in large skillet on medium-high heat until browned and crumbled; drain well. Add marinara sauce, spinach, Parmesan cheese and 1/2 cup of the shredded Mozzarella; mix well.
Spoon 1/4 cup sausage mixture into each hollowed out roll. Sprinkle each with 1 tablespoon shredded Mozzarella. Place on baking sheet.
Bake 12 to 15 minutes or until cheese is melted. Try with English muffins for an even more kid-friendly appeal!
