In a large mixing bowl blend together Bob Evans Home Style Unseasoned Shredded Potatoes, diced onion, salt, pepper, beaten eggs and flour.
Heat a large nonstick skillet on medium heat with ½ c. vegetable oil.
Working in batches, carefully drop ½ c. mounds into oil and flatten slightly.
Fry, turning once, until golden brown.
Transfer to paper towel lined plates to drain.
Repeat until all potato mixture is used.
