Keep it simple and flavorful on any occasion with this potato pancake idea, made with our home style unseasoned shredded potatoes.


  • 1 pkg. Bob Evans Home Style Hash Browns
  • 1/2 cup onion (diced)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 medium eggs (beaten)
  • 2 tablespoons flour
  • 1/2 cup vegetable oil
Potato Pancakes


  1. In a large mixing bowl blend together Bob Evans Home Style Unseasoned Shredded Potatoes, diced onion, salt, pepper, beaten eggs and flour.
  2. Heat a large nonstick skillet on medium heat with ½ c. vegetable oil.
  3. Working in batches, carefully drop ½ c. mounds into oil and flatten slightly.
  4. Fry, turning once, until golden brown.
  5. Transfer to paper towel lined plates to drain.
  6. Repeat until all potato mixture is used.
