Potato Soup with Original Sausage

This hearty and delicious sausage and potato soup is a wonderful way to warm up on those cold winter nights!


  • 1 lb. Bob Evans Original Roll Sausage
  • 2 tablespoons Olive Oil
  • 1 Chopped Onion
  • 1/4 teaspoons black pepper
  • 1/4 teaspoons Red Pepper Flakes
  • 1 can sodium-free chicken broth
  • 6 oz. precooked chicken strips
  • 1 pkg. Thawed pre-cut home fry potatoes
  • 1 tablespoon Chopped Parsley
  • 1 bunch Fresh Kale
Potato Soup with Original Sausage


  1. In soup pot, crumble and brown sausage with olive oil over medium heat.
  2. Add onions and sauté for 3-4 minutes longer.
  3. Add salt, peppers, broth, chicken pieces, potatoes and parsley.
  4. Bring to boil and immediately turn down to simmer. Simmer for 10 minutes then add kale.
  5. Cover and simmer for an additional 10 minutes. Refrigerate leftovers.
