Ingredients

  • 1 Pound Bob Evans Original Roll Pork Sausage
  • 2 Tablespoons olive oil
  • 1 onion chopped
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon black pepper
  • 1/4 Teaspoon red pepper flakes
  • 14.5 Ounces sodium-free chicken broth
  • 6 Ounces cooked chicken strips
  • 20 Ounces precut home fry (diced) potatoes thawed
  • 1 Tablespoon parsley chopped
  • 1 Bunch kale

Instructions

  1. In soup pot, crumble and brown sausage with olive oil over medium heat.
  2. Add onions and sauté for 3-4 minutes longer.
  3. Add salt, peppers, broth, chicken strips, potatoes and parsley.
  4. Bring to boil and immediately turn down to simmer. Simmer for 10 minutes then add kale.
  5. Cover and simmer for an additional 10 minutes. Refrigerate leftovers.
