Ingredients

  • 1 Package Bob Evans Original Mashed Potatoes
  • 2 Tablespoons horseradish
  • 8 Slices roast beef medium rare
  • 1/2 Cup au jus
  • 4 Ounces goat cheese crumbled
  • 4 Teaspoons crispy fried shallots
  • 4 Tablespoons chives chopped

Instructions

  1. Prepare Bob Evans Original Mashed Potatoes by following the recommended microwaving instructions on the package.
  2. Mix 2 tablespoons of horseradish into the mashed potatoes until well combined.
  3. Place 6 ounces of mashed potatoes in a martini glass.
  4. Top with 2 slices of medium rare roast beef, mounded in the center.
  5. Top with 1 ounce of au jus.
  6. Place 2 tablespoons goat cheese over beef and au jus.
  7. Top with 1 teaspoon crispy shallots.
  8. Garnish with fresh chopped chives.
  9. Repeat with 3 other glasses. Serve immediately.
