This sausage, bean and spinach soup is one of our go-tos, featuring Bob Evans® Pork Sausage Roll. It’s colorful, savory and surprisingly easy to make.

Ingredients

  • 1 Pound Bob Evans All Natural* Pork Sausage Roll
  • 1 Cup chopped onion
  • 3 Carrots diced
  • 3 Stalks celery diced
  • 3 Cloves garlic minced
  • 15 Ounces navy beans rinsed and drained
  • 32 Ounces chicken broth divided
  • 2 Teaspoon dried thyme
  • 5 Ounces baby spinach

Instructions

  1. Cook sausage, onion, carrots, celery, and garlic in a Dutch oven over medium heat until sausage is browned and crumbly; drain, and return to pot.
  2. Meanwhile, process one can navy beans and 1⁄2 cup broth in a blender until smooth.
  3. Add bean mixture, remaining can of beans, remaining broth, and thyme to sausage mixture.
  4. Bring to a boil, reduce heat, and simmer 15 minutes.
  5. Gradually stir in spinach until wilted.
  6. Season with salt and pepper, if desired.
  7. Enjoy!
