Sausage, White Bean, and Spinach Soup
This sausage, bean and spinach soup is one of our go-tos, featuring Bob Evans® Pork Sausage Roll. It’s colorful, savory and surprisingly easy to make.
Ingredients
- 1 Pound Bob Evans All Natural* Pork Sausage Roll
- 1 Cup chopped onion
- 3 Carrots diced
- 3 Stalks celery diced
- 3 Cloves garlic minced
- 15 Ounces navy beans rinsed and drained
- 32 Ounces chicken broth divided
- 2 Teaspoon dried thyme
- 5 Ounces baby spinach

- Cook sausage, onion, carrots, celery, and garlic in a Dutch oven over medium heat until sausage is browned and crumbly; drain, and return to pot.
- Meanwhile, process one can navy beans and 1⁄2 cup broth in a blender until smooth.
- Add bean mixture, remaining can of beans, remaining broth, and thyme to sausage mixture.
- Bring to a boil, reduce heat, and simmer 15 minutes.
- Gradually stir in spinach until wilted.
- Season with salt and pepper, if desired.
